I’m from New York City, where the only Buffalo I knew of came from wings, a football team, and a city in the state. Bison was the name of a Street Fighter villain, and Elk…well I don’t have anything clever for that. But nonetheless, I approached this as I do with anything as a chef: What’s the harm in trying it? Needless to say, I was amazed the first time I made an elk steak. It’s tender, not too gamey, with just the right amount of chew. I made a Korean bbq elk steak, piping hot on the grill, and it came out to be one of the best things I’ve ever had! My family enjoyed it too!
